Home-Tech’s foodies have provided you with three delicious watermelon recipes that will add to your enjoyment of summer’s most refreshing treat, the watermelon, while utilizing the best appliances on the market.  Although watermelon is more than 90 percent water it is also a rich source of vitamin A and potassium as well as the antioxidant, lycopene. Watermelon is perfect in salsas, salads, baked goods and more. Watermelon recipes are satisfying and have something so nostalgic about them.

 Watermelon Muffins

Watermelon juice and pulp make a moist, plump muffin. The chocolate chips simulate seeds as well as add flavor. You may substitute plumped raisins for the chocolate chips, if you wish. Total Time: 40 minutes

Yield: 12 standard muffins or about 48 mini-muffins

Ingredients:

  • 1-1/2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 6 Tablespoons (3/4 stick) butter, at room temperature
  • 2/3 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 cup (about 1/8 medium seedless watermelon) watermelon juice with pulp (see Note)
  • Red food coloring, optional
  • 3/4 cup miniature chocolate chips
  • Confectioners’ sugar, optional

Preparation:

Preheat oven to 350 F. Line standard or miniature muffin tins with baking paper cups.

Whisk together flour, baking soda, baking powder, cinnamon, and sugar in a medium bowl. Set aside. Cut seedless watermelon into cubes and process in a food processor or heavy-duty blender until thick with small bits of pulp still remaining. You will need 1 cup of processed watermelon.

In a large bowl, cream butter and sugar. Beat in eggs. Add sour cream and watermelon, beating just until combined. (A few drops of red food coloring may be added to the batter to enhance the color to simulate watermelon.) Fold in chocolate chips. Fill muffin tins 3/4 full. Bake 20 to 25 minutes for standard muffins or 15 to 18 minutes for mini-muffins. Place muffins on racks to cool. Just before serving, sift with powdered confectioners’ sugar, if you wish.

Sweet/Sour Watermelon and Cucumber Salad

Ingredients

  • 1/2 cup cider vinegar
  • 1 cup water
  • 1/2 cup sugar to taste
  • 1 tablespoon poppy seeds
  • 1 dash salt and pepper to taste
  • 1 bunch scallions, trimmed and chopped
  • 3 cups seedless watermelon balls or small chunks
  • 2 English cucumbers, peeled, seeded and sliced into small slices

Instructions

Mix together the vinegar, water, sugar (adjusting as desired) and poppy seeds in a bowl and season with salt and pepper to taste. Stir in the chopped scallions. Place the watermelon and cucumber in a serving bowl and pour the marinade over the top. Serve immediately or cover and refrigerate a couple of hours before serving. Toss gently before serving.

Jamaican Rock Lobster Tacos

Ingredients

  • 2 cups watermelon, cut into 1/2 inch cubes
  • 4 tails rock lobster tails, cooked
  • 2 avocados peeled, cut into 1/2 inch cubes
  • 2 papaya cut into 1/2 inch cubes
  • 1/2 cup cilantro, fresh, coarsely chopped
  • 1/2 cup fresh lemon juice
  • 1 tablespoon jerk seasoning
  • 1 dash salt and pepper to taste
  • 1 head iceberg lettuce
  • 1 ounce shredded coconut

Instructions

Cut tails in half lengthwise, remove vein, cut into 1/2 inch slices. Combine lobster with watermelon, avocados, papaya, and cilantro. Pour lime juice into small bowl and slowly whisk in honey and jerk seasoning. Pour over lobster mixture and refrigerate one hour, stirring occasionally. Place in soft taco shells on a bed of shredded lettuce, sprinkle with coconut.
