Perfect Sugar Cookies

  • ¼ cup solid vegetable shortening
  • ½ cup sugar
  • 1 egg
  • ¼ teaspoon vanilla
  • 1-cup flour
  • ¾ teaspoon baking powder
  • Sugar
  1. Preheat convection oven to 325 degrees.
  2. In a mixing bowl combine the shortening and the sugar.  Using an electric mixer cream these 2 ingredients together.
  3. Add the egg and vanilla to the creamed mixture.  Using an electric mixer beat this mixture for about 1 minute.
  4. In another bowl mix the flour and baking powder together.
  5. Gradually add the dry ingredients to the creamed mixture, using an electric mixer, mix well.
  6. Chill the dough.
  7. Lightly cover the rolling pin with powdered sugar.
  8. Divide the dough in half.
  9. Shape each half of the dough into a ball.
  10. Coat the dough ball with powdered sugar.
  11. Using the rolling pin, roll the dough out until it is ¼ inch thick.
  12. Cut the cookies out from the dough with a cookie cutter.
  13. Place the cookies on an ungreased baking sheet.
  14. Repeat step 10 –13 with the other half of the dough.
  15. Lightly sprinkle sugar on top of the cookies.
  16. Bake for 8 minutes in a convection oven at 325 degrees.
  17. Remove to a wire rack to cool.
